My idea of “baking” is usually taking a store-bought mix and adding an egg and some oil and sticking it in the oven. Slap on a little frosting from a jar and voila…dessert.
Well today I wanted to do something special for my hubby’s birthday. Travis is always so good to me and puts up with my nagging, whining and occasional ADHD so the least I could do was make him some cupcakes from scratch for once!
I did some hunting online for some good recipes and soon came across one that turned out awesome! I highly recommend it if you’re looking for an easy, quick, cupcake recipe. Just try not to think about all the butter and sugar in it! Enjoy!

Right out of the oven the cupcakes were a beautiful gold color and the homemade chocolate frosting turned out soft and fluffy!
After the cupcakes cooled, I frosted them and they turned out great! Although I got a chance to “taste test” a bit of cake batter and frosting while cooking, Travis was the first official cupcake taster and said he loved them. Happy birthday hunny bunny!
